The other night Bill and I made these beef filet pretzel sliders with horseradish sour cream sauce for dinner and my, oh my, were they good. The beef was so tender and the caramelized onions lent such a great flavor to the beef filets. I knew these were going to be good.
At first, while I was waiting for Bill to come home from work, I started prepping the horseradish cream sauce and the onions, until I cut my finger on our mandolin. Man, did that hurt. Needless to say, that slowed me down a bit as I was running around the house with gauze in my hands while yelling at the kids for some help. They looked at me like I was crazy. I managed to get myself bandaged up and the onions in the pan to saute, but as soon as Bill walked in the door, I handed him the knife and assigned him steak duty. Cooking with basically one hand just wasn’t working.
Once the steak was done, we let it rest for two minutes before assembling the sliders. The house smelled so good and Bill was starving. He couldn’t wait to dig in. As I sat down at the table, Bill took his first bite and was instantly a fan. These sliders are so simple to make and so, so, good. The horseradish sour cream sauce tops it off just perfectly too. They’re very filling. Definitely more than enough for an actual dinner.
BEEF FILET PRETZEL SLIDERS WITH HORSERADISH SOUR CREAM SAUCE
SERVES: 4
INGREDIENTS:
4 2-ounce beef filet tenders, USDA choice or better
Kosher salt
Coarsely ground black pepper
4 Labriola pretzel slider buns
Caramelized Onions:
2 Tbsp unsalted butter
1 Spanish onion, julienne cut
1 Tbsp brown sugar
Pinch of salt and pepper
Horseradish Sour Cream Sauce:
8 ounces sour cream
2 Tbsp prepared horseradish
2 tsp finely chopped chives
Pinch of salt and pepper
DIRECTIONS:
Prepare the onions: In a saute pan over medium-high heat. combine butter, onions, brown sugar, salt and pepper. Toss until the butter is melted and the onions are coated with the sugar, salt and pepper. Continue to cook, tossing every 90 seconds, until the onions are dark brown and caramelized. Set aside.
Prepare the sauce: In a medium mixing bowl, combine all ingredients. Fold until all ingredients are incorporated. Let stand.
Season both sides of beef filet tenders with salt and pepper. Heat a saute pan over medium-high heat. Place the seasoned filets in the middle and leave for 2 minutes. Turn and cook for an additional 2 minutes. (Add or subtract time according to taste). Remove from the pan and let rest for 2 minutes. Slice each tender into 4 strips.
Slice buns in half. On each bottom half, layer caramelized onions, filet slices and horseradish sour cream sauce. Add the top half and serve.

They really are good. You can cook the meat to your taste (well, medium, medium rare…). We definitely enjoyed them. 😋
