We have pears in our house about as often as we have apples. They are two of my favorite fruits to bake with. We’re always receiving them in our fruit and veggie delivery from Daily Harvest Express. This time we received a few Asian pears. Asian pears are round and crunchy, similar to an apple, so they’re great for baking.
That’s where this cardamom pear pie bar recipe comes in. It starts with a flaky pie crust filled with cardamom custard and sliced pears, topped off with a cinnamon/sugar crumble topping. It really is a lovely little dessert and I love the mixture of cardamom with pears. They really work well together.
I had a wine event to attend this evening so I’m sure not cutting into it until I got home, was torture for my husband. The house smelled magnificent before I left. Though, you have to let this dessert cool completely before you can cut into it, so my husband had to wait for a while anyway. The wait was totally worth it. These are such tasty bars, I highly recommend them. They would also work well with a bit of vanilla ice cream and maybe a drizzle of caramel, though just maybe….
CARDAMOM PEAR PIE BARS
INGREDIENTS:
- 2-3 pears, peeled, sliced 1/4″ thick (can use 2 cans of pears when not in season)
- 1 cup sour cream or whole plain yogurt
- 1 Tbsp flour
- 1/2 tsp salt
- 3/4 tsp cardamom
- 1 egg, beaten
- 1/2 cup sugar
- 1 tsp vanilla
- 1 pie crust (homemade or store bought)
- 2/3 cup flour
- 1/3 cup sugar
- 1/4 cup butter
- 1/2 tsp cinnamon
DIRECTIONS:

Preheat oven to 350° and place pie crust onto small baking pan 8 x 8 or 7 x 11. Poke bottom 4 or 5 times with a fork.

In a medium mixing bowl, mix all ingredients except pears.

Pour into prepared baking dish.

Peel, seed, slice pears and arrange slices evenly on top of filling.

Bake for 15 minutes, then remove from oven.
In a small mixing bowl, mix all ingredients with a fork until crumbly. Sprinkle evenly on top of pears and bake for 30-40 minutes or until set. Remove from oven and cool completely. Cover and refrigerate. Best serve cold.
